Ikan bakar – grilled fish in banana leaves

Ikan bakar means grilled fish in malay. It’s a favourite dish in malaysia or indonesia and you will find many stalls selling their ikan bakar. The secret to making a really good ikan bakar is the making of the chilly (sambal) paste itself. The more pungent and tasty the fish gets infused, the better the taste. 

A lot of people shy from making ikan bakar coz they think its so complicating. Well it isn’t. If you have prepared your sambal paste in advanced this will take jiff to whip up a pungent delicious authentic dinner. A possible ingredient that can be difficult to get anywhere outside of asia is the banana leaf. But once you do get it, you can deep freeze it and use it whenever you choose to.  There are also recipes which describe the using of aluminium foil to substitute the banana leaf.  It’s actually the banana leaf that makes this dish really special.. No ikan bakar is what it should taste like without grilling it over banana leaves. ;-)
