Here’s something that’s quick and simple, and just a little different. If you have very little time and you’re looking for a recipe to satisfy and yet is tasty, this is what you could try..
2 chicken drumsticks with thighs
5 cloves garlic
1 cup rice wine / sherry
1 white onion
2 tbsp dried dates (optional)
soja sauce to taste
3 tbsp Oil
Clean chicken under freshwater, cut the chicken at it’s joining. Pat to dry. Slice and chop garlic until it is fine, quarter the onion.
Heat the oil in your wok. Once the oil is hot, fry the chicken until golden brown. Immediately drench the chicken in white wine. Simmer for a couple of minutes, before adding the dates. Cover the pot to continue simmering for another 3 minutes until most of the wine has evaporated.
Serve hot, with white rice. Serves 2
