Old Cucumber Soup with Pork Ribs

The old yellow cucumber (lou wong kwa) is a yellow cucumber that has been left to age until the skin has turned dark yellow. It is believed to have “cooling” properties and is high in dietary fiber. Combined with pork ribs, this soup dish makes a delicous traditional soup for hot stuffy days and is often dished out traditionally during the Chinese New Year.
